At Ristorante STORIA Maxvorstadt, we bake our pizzas according to the traditional Pizza napoletana method: The dough rests for at least 48 hours at controlled temperature, then shaped by hand (never rolled!) and baked in a stone oven at 400°C in just 90 seconds.

A real stone oven reaches temperatures of over 400°C. At this heat, the pizza bakes in just 90 seconds: The base becomes crispy, the edge airy, and the typical leopard spots form.
San Marzano Tomatoes – Why?
San Marzano tomatoes DOP grow at the foot of Mount Vesuvius near Naples in volcanic soil. They are sweeter, less acidic and have fewer seeds than regular tomatoes. Essential for authentic Pizza napoletana.
