About Ristorante STORIA
STORIA is a family-run Italian restaurant at Karlstraße 47a in Munich Maxvorstadt – open since 2015 under Domenico Speranza and his family. We serve Neapolitan pizza from a stone oven at over 400 °C, homemade pasta and Southern Italian cuisine from the Cilento region. Not a concept from a corporate playbook, but recipes Mamma Speranza has cooked at home for decades. The difference between a genuine family business and a restaurant chain shows on every plate.
More about STORIAThe Speranza family from Rofrano in the province of Salerno: Domenico (Mimmo) Speranza is the founder and head chef, in German gastronomy since 1995 – previously at Restaurant Cinema in Rosenheim and six years as managing director at H'ugo's Munich. His brother Nicola heads the restaurant operations. And the heart of the house is Mamma Speranza – her recipes form the foundation of our menu.
Meet the Speranza familySTORIA is popular with Munich residents because it offers authentic Italian cuisine without tourist markups. The central Maxvorstadt location makes it ideal for locals after work, after the museum, or after university. The Speranza family values quality over quantity – and many regulars appreciate the personal atmosphere and the covered terrace.

Much of what passes as Italian food in Germany is a local adaptation: Spaghetti Bolognese as a main course (in Italy, 'Bolognese' doesn't exist as such – the original is Tagliatelle al Ragù, and it's a primo, not a main), pasta in cream sauces, pizza loaded with five toppings. At STORIA, we serve what people actually eat in Southern Italy: Neapolitan-style pizza with a light dough and minimal toppings, pasta paired with the sauce that matches the shape, risotto as its own course, secondi without a starchy side – and a tiramisù that actually tastes of mascarpone.
View our menuTake your time and eat across several courses – that's the classic Italian way: an antipasto (e.g. Burrata with pesto, Carpaccio di Manzo or Bruschetta), then a primo like Tagliatelle al Ragù, Linguine alle Vongole or Gnocchi al Gorgonzola, followed by a secondo like Saltimbocca alla Romana, Branzino al Forno or grilled Gamberi. Smaller portions, but more flavour. Our team is happy to advise – the daily specials are almost always worth it.
Explore the menuThree things: a 48-hour dough fermentation at controlled temperature (which makes all the difference in flavour and digestibility), San Marzano DOP tomatoes and buffalo mozzarella from Campania, and a real stone oven at over 400 °C where the pizza bakes in 60–90 seconds. The result: a crispy base, an airy, soft cornicione (crust) and the characteristic leopard char marks.
Our pizza specialitiesClassic Italian across multiple courses: Antipasti (starters such as Bruschetta, Caprese, Vitello Tonnato, Burrata with pesto), Pizza from the stone oven, Primi (homemade pasta and risotto), Secondi (meat and fish: Saltimbocca, Ossobuco, Branzino, Gamberi), Dolci (Tiramisù STORIA, Panna Cotta, Cannoli Siciliani, Affogato al Caffè) and Caffè & Digestivo. The menu is available in German and English, our team speaks German, English and Italian.
View the menu'Al dente' literally means 'to the tooth' and describes the perfect cooking point for pasta: still firm when you bite into it, with a slight resistance in the middle – never soft or overcooked. This is how pasta is served in Italy, and this is how we serve it at STORIA. If you prefer it softer, just let us know – but we do recommend trying it this way first.
Yes, from September to February we serve Italian game specialities: Cinghiale (wild boar), Capriolo (venison), Lepre (hare) and venison ragù. The game comes from sustainable hunting by local Bavarian hunters. From March onwards, the menu returns to pasta, pizza and seafood.
Game dishes in MunichYes, homemade pasta following traditional Southern Italian recipes is one of the house specialities. Tagliatelle, Gnocchi, Ravioli with ricotta and spinach – the pasta shapes are chosen to match the sauce, as is customary in Italy.
View the menuYes, Tiramisù STORIA is one of the most popular specialities of the house – homemade with real mascarpone following Mamma Speranza's recipe. We also serve Panna Cotta, Cannoli Siciliani and Affogato al Caffè.
Dining Etiquette
In Germany, 10% is customary. For particularly good service or larger groups, more is always welcome. Tipping is voluntary – but it goes directly to our team.
With a fork, not a spoon. Spaghetti are twirled against the rim of the plate – using a spoon as an aid is not common in Italy. Pasta is also not cut into bite-sized pieces. Wiping up the sauce with bread at the end is absolutely encouraged: in Italian this is called 'fare la scarpetta' and is considered a compliment to the kitchen.
A few common ones: Gnocchi – 'Nyoki' (not 'Gnotchi'), Bruschetta – 'Brusketta' (the 'ch' is hard, not 'sh'), Tagliatelle – 'Taly-a-telle', Penne all'Arrabbiata – 'Penne all-arrab-ya-ta', Saltimbocca – 'Saltim-bokka', Tiramisù – stress on the last syllable: 'Tirami-sù', Branzino – 'Brant-see-no'. Mispronouncing is absolutely fine – we understand you either way.
